The Origin of Corteza

Corteza was born as an extension of my passion for fine cuisine and my desire to create a space where people feel welcome and connected. I am Alejo Cardona, a Mexican-American entrepreneur, and I have always believed that the dining experience goes beyond flavors: it is an act of gathering, enjoyment, and celebration.

This project reflects my personal commitment to excellence and warmth. Every detail, from ingredient selection to the service in the dining room, is designed so that our guests feel like they are in my own home. Corteza is, at its core, the combination of my roots, my love for gastronomy, and my desire to be a gracious host, offering moments that remain in the memory of those who visit us.
